Ingredients

3 tablespoons olive oil 2 heads of Escarole chopped 4 cloves garlic , minced1 tablespoon garlic powder (1) 15 oz. can of cannellini beans, drained Salt & Pepper to taste 1 cup of water into large skillet 1 teaspoon garlic powder

Preparation

Cut up and rinse 2 heads of escarole, in a large skillet of 1 cup of water add salt. Add the escarole, add salt and pepper on the top of the escarole, Drain 1 can of cannellini beans, place on top, add chopped fresh garlic, add garlic powder. Steam for 15 minutes, add extra virgin olive oil, stir and steam for another 5 minutes. Place in large bowl. Ready to serve. OPTIONAL: add 1 cup vegetable broth or chicken broth during the 15 minute simmer time to serve as a soup.
