Italian Poached Fish with Crispy Crostini

Ingredients

4 cod fillets or fish of choice (snapper, sole, branzino) 1/2 cup extra virgin olive oil 1/2 cup red onion chopped 1 cup fennel bulb sliced thin 1/2 teaspoon crushed red pepper 5 garlic cloves finely sliced 15 red cherry tomatoes 10 yellow cherry tomatoes 1 cup green olives pitted 3/4 cup of white wine (Chardonnay or Pinot Grigio) 2 cups water 2 teaspoon kosher salt 1 teaspoon of pepper 1 teaspoon garlic powder 1 teaspoon onion powder 2 tablespoons basil (hand cut) 2 tablespoons parsley chopped

Preparation

Sauté olive oil, red onion (chopped), 5 garlic cloves finely sliced, add garlic powder and onion powder. Stir and add 2 cups of water, fennel, cherry tomatoes (red & yellow) and boil for 5 minutes, add kosher salt & pepper and green olives. Cover and boil for 5 minutes, stir and add fresh basil hand chopped, white wine, 1/2 teaspoon crushed red pepper. When finished boiled add parsley, place fish, skin side down and poach. Cover with sauce and tomatoes in pot. Simmer for 5 minutes, place on platter and cover with sauce and tomatoes. Crostini: Cut baguette bread in half, with a brush spread olive oil on both sides. Dip brush in grated cheese and brush on. Sprinkle salt & pepper, garlic powder. Brush again and
