Lemon Ricotta Pasta with Spinach & Linguini

Ingredients

1 lb. Linguine pasta - save 1 cup pasta water 1/2 cup extra virgin olive oil 5-6 garlic cloves 1 teaspoon kosher salt 3 cups spinach 2 lemons (squeezed) hold pieces 8 oz ricotta cheese 6 teaspoons Locatelli cheese 2 tablespoons fresh parsley

Preparation

Add pasta to boiling water and save 1 cup of pasta water and set aside. In a heated sauce pan, add olive oil, salt, pepper, squeezed lemons. Add 3 cups of spinach into the boiling pasta water. Put 1 cup of pasta water into the sauce pan and stir in the ricotta cheese. Add grated cheese into the sauce and stir. Let simmer. Strain pasta with spinach and put into the sauce pan and stir. Plate it in a large bowl with fresh parsley, 2 teaspoons of additional cheese. Ready to serve.
