Meatloaf, Mashed Potaoes, String Beans

Ingredients

2 lbs. ground beef 1 cup flavored breadcrumbs 1 egg 1/2 cup ketchup, 2 tablespoons mustard 1/4 cup fresh parsley (chopped) salt & pepper to taste 1/4 cup granulated onion powder 8 medium potatoes, peeled and diced 2 cups string beans, steamed

Preparation

Preheat oven to 350°F (175°C). Mix beef, breadcrumbs, egg, onion powder, fresh parsley, salt & pepper, mustard and half the ketchup. Form into a loaf shape, top with remaining Ketchup, and bake for 1 hour. Boil potatoes until tender, then mash with butter and milk and salt. Serve meatloaf with mashed potatoes and string beans.

Sauce Ingredients

2 cups beef broth 2 tsp. granulated garlic powder 2 tsp. granulated onion powder 1/4 cup cold water + 3 tablespoons corn starch (mix together) Salt & pepper to taste

Sauce Preparation

In a medium sauce pan, bring to a boil over medium heat. Stir in garlic & onion powder, salt & pepper. In a small bowl whisk together cold water & corn starch until dissolved. Pour into boiling beef broth and reduce heat to a low heat. Stir until thickened. Serve hot over your meat & mashed potatoes.
