Ingredients

1 lb. Linguine pasta - 1 cup pasta water 1 tablespoon olive oil 2 garlic cloves (minced) 1 teaspoon salt 1 teaspoon pepper 1 tablespoons basil (granular) 2 tablespoons basil (hand cut) 4 oz pancetta 4 large eggs 1/2 cup Locatelli Pecorino Romano cheese 1/2 cup parsley

Preparation

Boil linguine and 1 cup of pasta water set aside In a sauce pan add olive oil, minced garlic, salt, pepper, basil, fresh basil, pancetta, cover and saute for few minutes. Strain pasta and leave it moist and put pasta back into the pot. In a bowl, put scrabbled eggs, 1/2 cup grated cheese, mix and put into the pasta pot and stir. Add pasta water and low simmer. Put sauce into the pasta pot and mix. Plate it and garnish with parsley.
