Ingredients
1/4 cup EVOO 16 oz angel hair pasta 2 cloves garlic, minced 3 cups mixed seasonal vegetables, zucchini, green & red peppers, carrots (sliced thin) yellow squash, broccoli florets, yellow and red onion 1/2 cup grated pecorino romano cheese salt and pepper to taste
Preparation
Cook angel hair according to package instructions. In a skillet, heat olive oil and sauté garlic and all vegetables until tender. Toss cooked pasta with the sautéed vegetables. For garlic bread, mix butter and minced garlic, spread on sliced Italian bread, and toast in the oven. Serve pasta with garlic bread and salad.
