Ingredients

3 lb pork roast 6 medium potatoes, diced 4 cups carrots, sliced 1/4 cup evoo, (divided) 4 tbsp butter 1/4 cup granulated garlic powder 1/4 cup fresh parsley (chopped) 1/3 cup brown sugar salt & pepper to taste

Preparation

Preheat oven to 350°F (175°C). Season pork roast with 1/8 th cup EVOO, salt, pepper, parsley, and garlic powder. Roast for about 1 hours or until the internal temperature reaches 145°F (63°C). Toss potatoes and carrots with olive oil, salt, and pepper; sprinkle carrots with brown sugar, roast alongside pork in the same pan for 1 hour. Serve pork with roasted potatoes and carrots.
