Ingredients
2 eggs 8 oz. whole milk ricotta drained 1/2 cup grated parmigiano reggiano cheese plus extra for a sprinkle once cooked to garnish and serve 1 cup Italian flavored breadcrumbs 2 tablespoons Evoo 4 cups of fresh spinach 3 garlic cloves (minced) 2 teaspoons Italian seasoning one small onion chopped very fine 25 oz. marinara sauce (optional) to be poured over the spinach balls sea salt & pepper to taste
Preparation
Heat the evoo in a fry pan, add garlic, and saute spinach for 3-5 minutes to get it soft. season with salt & pepper. transfer to a colander and squeeze out the water. Mix the ricotta, spinach, grated cheese, chopped onion, Italian seasoning, dried breadcrumbs, sea salt & pepper. Mixture should be dry enough to shape into a solid ball. If needed you can add more breadcrumbs. Place each ball in a parchment lined baking dish , coated with evoo and bake at a temp of 375 degrees for 35 minutes. Serve warm and sprinkle with grated parmigiano cheese.
